Here in Austria people make a lot of kinds of pesto. Some include most of the traditional ingredients like basil or pine nuts, others are completely different. But mostly they are green and share the same consistence as normal Italian pesto.
Pesto made of wild garlic is one of the more popular products made in spring. It has the same spicy taste as normal pesto and is also made with pine nuts. You can of course use different nuts like almonds or walnuts. In this pesto recipe I use only wild garlic, but you can also add some parsley or other herbs.
Why I don’t use a mortar and pestle
Instead of a mortar and pestle I use a food processor because I always have trouble to make a pesto with the right consistence. And it is actually much faster using a food processor. I know a lot of people who prefer to use a mortar and pestle though.
